About Raiz y Sabor
Raíz y Sabor is an authentically Oaxacan project, created with the intention of honoring, protecting, and sharing the cultural richness of the Mercado de Abastos (wholesale market) and the families who keep it alive. We are a local, responsible, and deeply respectful experience for the community that welcomes us every day.
Our tour is led by Carlos “Charlie” Gómez, a local host with deep roots in the Central de Abastos market and a genuine commitment to his community. His life has been connected to the market since childhood, when he would help his family at their memela stand. Today, he continues to share that connection through experiences that celebrate Oaxacan gastronomy, art, and tradition.
At Raíz y Sabor we work under one clear principle:
We do not charge or receive commissions on purchases made by participants during the tour. We reject tourism practices that exploit or coerce vendors. We believe in a fair economy: every peso you spend at the market goes directly to the families who produce, cook, and uphold the tradition.
Our goal is simple yet profound: to share our culture, our people, and our spaces with pride, respect, and responsibility. We want you to experience Oaxaca from within, through its flavors, stories, textures, and the generosity of its community.
